The elaboration of Cognac
The production of cognac goes through several stages: the harvest of the grapes, the vinification of the white wines obtained after a few weeks, the distillation from mid-November to the end of March at the latest, the aging of 5 to 20 years or even much more thanks to the quality of the production of the traditional cooperages, for, finally, the greatest pleasure of the gastronomes.

From a quality vineyard, transported by boat to the countries of northern Europe, the wines of Poitou, La Rochelle and Angoumois were, from the 13th century, the delight of the English, the Dutch and the Scandinavians.
